Best place to vacation as celiac?

Before I begin my grad program in the fall I want to go on one last trip. I was wondering if there were any places that any of you have travelled to that had great gf options. For reference, I live in Canada, but I am willing to travel anywhere. I just want to get away from my town for a bit. Thanks in advance :-)
