sçaling a cheesecake recipe?

Hi everyone, I'm trying to experiment with some cheesecake for sampling but I don't need a ginormous amount. I just wanted to bake a biscoff cheesecake with no more than 16oz of cream cheese & 8 inch pan.

I'm can't find one. Can I just scale a recipe down & count on it to taste, set right?

Would my best bet be to just make bars & would that taste the same?
