Question about eating habits

I've known i have PCOS for a while now, and got told in the last few months that I'm also insulin resistant. I'm really struggling with eating because pasta and bread is my absolute favorite foods (I make them homemade) and im almost never home so it's difficult to eat the way I should. I still haven't found any high protein breakfasts I enjoy bc I don't like to eat eggs a lot and it feels like that's the only recommendations out there. I just feel so stuck. It's hard to really cook much at home bc my parents are the main ones to buy and cook food. Do yall have any good recipes that are cheap/quick? For any meal/snacks. Im desperate at this point.
