Tips on finishing this beam with drywall?

Just moved into our first home and took out a row of pass-thru cabinets that were separating our kitchen and dinning room. We managed to finish the side of a remaining cabinet we were keeping but now have this to do.

I’ve had family and friends recommend some basic finishes like white board and paint or molding, but I want a full finished wall look.

Thinking drywall cut to fit and then corner beads followed by mudding, sanding and painting.

Does that make sense? How difficult would it be for a beginner?
